Einkorn Cookie Butter Cookies

Let me just say these cookies are going to ROCK YOUR WORLD!!!

I saw a recipe for peanut butter cookies and thought I would make some substitutions and see how they turned out and they far exceeded my expectations.  These cookies are no dairy and I have used Young Living Einkorn flour mix in place of regular flour.  Young Living Einkorn Pancake and Waffle mix combines ancient einkorn wheat with a variety of nutritious, low-gluten grains and ground legumes. It offers a deliciously unique, earthy flavor and serves as an excellent base for many different baking recipes. Einkorn Cookie Butter Cookies

Einkorn Cookie Butter Cookies

Ingredients:

3/4 cup cookie butter (mine is Biscoff from Costco)
1/2 cup coconut oil, softened (like butter; not hard and not runny or melted)
1 cup light brown sugar, (coconut crystals, your choice of sweetener)
1 large egg
1 tablespoon vanilla extract (yes tablespoon, not teaspoon)
1  1/4 cups Einkorn flour mix
2 teaspoons corn starch
1 teaspoon baking soda
1/4 teaspoon salt, optional

Directions:

  1. In a large bowl, combine cookie butter, coconut oil, egg, sugar and mix to cream until light and fluffy, 4 to 5 minutes. Note – Coconut oil should be the consistency of soft butter like you’d use to cream with sugar and eggs in traditional cookies. If coconut oil is rock hard, microwave it in a small bowl for 5 to 10 seconds or just until it begins to soften. If coconut oil is runny or melted, place it in the freezer momentarily until it firms up. A tiny amount of runniness is fine; it’s an oil and that happens. But do not use melted or purely liquid coconut oil because you can’t effectively cream a liquid; it would be like trying to cream liquid butter.
  2. Scrape down the sides of the bowl, add the vanilla and mix to incorporate, about 1 minute.
  3. Add 1 cup flour, corn starch, baking soda, optional salt, and mix until just combined, about 1 minute. If your dough seems quite wet, sloppy, or isn’t combining, add up to another one-quarter cup flour, one tablespoon at a time, for a total of 1 1/4 cups. The dough shouldn’t be sticky or tacky, and a little loose and oily is preferred to dry and crumbly. It should have a Play-Doh like consistency, and if pinched and squished, it’ll stick together and to itself, but not to your hands. Over-flouring the dough will cause the cookies to be dry.
  4. Using a medium cookie scoop, form mounds that are 2 heaping tablespoons in size; or divide dough into approximately 18 equal-sized pieces. Place dough mounds on a large plate, and slightly flatten each mound. Get the dough mounds in the exact shape you want to bake them in because after chilling, flattening or re-shaping the dough is difficult. Cover with plasticwrap, and refrigerate for at least 2 hours; up to 5 days. Do not bake these cookies with dough that has not been properly chilled because they will spread.
  5. Preheat oven to 350°F. Place dough on baking sheet.
  6. Bake for 7 to 9 minutes.
  7. Allow cookies to cool on the baking sheet for 5 to 10 minutes before moving. Store cookies in an airtight container at room temperature for up to 1 week, or in the freezer for up to 3 months. Alternatively, unbaked dough can be stored in an airtight container in the refrigerator for up to 5 days, or in the freezer for up to 3 months, so consider baking only as many cookies as desired and save the remaining dough to be baked in the future when desired.

Morning Routine

My morning routine used to be coffee, but I have traded that in for NingXia Red, MindWise and a Super C.  When I’m dragging I add a NingXia Nitro.  I have noticed that this last longer and gives me clarity that I need for the day.  When my allergies flair up I add a second NingXia Red later in the day.  I also love to add oils to this!  This is where it gets fun.  I feel like a bar tender of essential oils!

MindWise is a new product that was introduced at Young Living Convention and I am very excited about the lives that will be helped with this.  It even tastes good!

EINKORN Crepes

Have you purchased the Einkorn Pancake and Waffle Mix yet?  I got it at Young Living Convention and have been excited to experiment with it.  On the side of the box is a crepe recipe.  I have never made crepes, but I love them, so I decided to give it a try.  If it is your first time as well, my tip to you is double your recipe.  It takes a couple tries to get it right. (Oh, and the syrup comes out fast!)

EINKORN Crepes with Lemon Filling and NingXia Berry Syrup

Einkorn crepes

Ingredients:

3/4 Cup of Einkorn Pancake Mix

1 Cup of water (or milk of your choice)

2 eggs

1 tsp. vanilla

1 Tbsp. sweetener of your choice (Yacon Syrup, Blue Agave, cane juice crystals, etc..)

1/4 tsp. salt

2 Tbsp. melted butter

Instructions:

1. In a blender combine Einkorn mix, water or milk, eggs, vanilla, sweetener, salt and melted butter.  Blend until smooth.  Cover and refrigerate 1 hour.

2. Heat a skillet over medium-low to medium heat and brush with oil.

3. Pour about 1/4 cup of batter into the skillet and tip to spread the batter to the edges.

4. When bubbles form on the top and the edges are dry, flip over and cook until lightly browned on the other side and edges are golden.

5. Repeat with remaining batter.

 

Lemon Crepe Filling

Ingredients:

1/4 block of 8oz. Cream Cheese

1 Tbsp. Sweetener of choice

1 tsp. Vanilla

4 drops Lemon Young Living Essential Oil

 

Instructions:

Cream above ingredients together.  Smear a Tbsp. of the filling on your finished crepe while it is still hot and then fold it in half, and then fold over the sides.

There Is Always Someone Who Will Do It Cheaper…

One thing I hear a lot is that Young Living is expensive.  After spending a week in Utah and seeing the farm and how seriously they take quality, I see that we probably don’t pay enough for this process.  Most of us would not be willing to work as hard as Young Living does!  You can read about Young Livings seed to seal process here: seedtoseal.com

The stuff you see at the grocery store is not quality stuff.  For it to be sold in a store it has to be FDA approved which means absolutely nothing.  The FDA allows these companies to label their “oils” 100% pure but only requires them to have 10% pure oil in it.  So what is the other 90%?  Chemicals, fillers, water, etc…  The FDA is also not my standard of things that are good because they approve all kinds of bad stuff we shouldn’t be putting in to our bodies.

Pure oils do not expire.  If you have any oils that are not Young Living they most likely have an expiration date somewhere on them.  This means they have fillers.  Fillers expire!

Also when you consider all the things that you never need to buy again once you start using Young Living Oils and other Products, you will be saving money and not putting harmful chemicals into your body.

This was my very first Young Living Convention.  I am so thankful for the opportunity to go and see first hand how wonderful our company is and how serious they are about Young Living standards.  Convention was in Salt Lake City, Utah this year.  We stayed at The Hilton which is right across the street from the convention at the Salt Palace.

Monday, Day 1

When we first arrived we went to a leadership session with several great speakers.

First, Darren Hardy is the publisher and founding director of SUCCESS magazine. Hardy is a businessman, author, private equity investor, keynote speaker, corporate advisor, and a mentor to CEOs and entrepreneurs.  He  spoke on 21st Century Leadership.

A few of my favorite take aways:

Lead by example – behavior never lies

Leaders set the pace – people don’t go as fast as they can, they go as fast as they are being led

How do you get people to do what you want?  Ask yourself 2 questions: What do you want?  (list 12 top attributes you want)  Do I demonstrate these attributes?

Everybody recruits: military, colleges, sports, charities, religious, corporations

The best businesses have the best people.  Great people aren’t trained, they are found

Sell You! You are the living spokesperson for Young Living.  They are going to buy it if you believe it and exemplify it.   You can’t convince someone of something you don’t believe yourself.

Change SELL to HELP!  Help people better themselves, focus on how you can help them instead of what they can do for you.

Then Connie Podesto, Award-Winning Author, Comedian, and Expert in the Psychology of Human Relations.  She was funny and identified our personalities and taught me I was a triangle.

Last but not least was our founder, Gary Young.  He is so passionate about what he does, it is contagious!  He encouraged us all to Dream Big, Live our Dream and don’t let people squash our dreams!
